Winter is finally here and what better way to keep warm than enjoying a cinnamon infused glass of mulled wine. This winter favourite is sure to please your friends and is super easy to prepare, making it a quick and easy afterwork treat. Give it a go today.

Ingredients
Peel of 1 lemon
Peel of 1 lime
Peel of 2 clementines and juice
100g Cranberries
1 Cinnamon stick
1 Whole nutmeg pod (grated)
1 Vanilla pod (halved lengthways)
2 Star anise
3 Bay leaves
6 Whole cloves
200g Caster sugar
1.5 Liters of Gentleman Cab Sauv

Method
Start off by peeling the lemon, lime and clementines in 2cm strips. Pour the caster sugar into a large saucepan. Add lemon, lime and clementine zest into the pan and mix. Gently squeeze in the clementine juice and cranberries while stirring. Add the cloves, cinnamon stick, bay leaves and about 10-12 grams of grated nutmeg. Throw in your halved vanilla pod and stir in just enough red wine to cover the dissolved sugar. Do not use both bottles of wine as this will burn off the alcohol.

Place pan on the stove and heat concoction on a medium flame. Reduce heat and let it simmer whilst stirring to allow the sugar to dissolve evenly. Once sugar has dissolved, turn up the heat and bring the mixture to a boil. Keep on a rolling boil for about 4-5 minutes, or until you’ve got a beautiful thick syrup. This will create a wonderfully delicate and spicy flavour base and will allow the mixture to soak up the cinnamon.

Once the mixture has thickened, turn down the heat to low and add in the star anise. Gently mix in the rest of the wine and heat for around 3-5 minutes. When the wine has warmed, ladle into glasses and serve. Enjoy!
